Cottage Cheese Cookies recipe

Cottage cheese, as a substitute for shortening,gives these cookies a rich, shortbread-like texture.

Recipe: Cottage Cheese Cookies

1/2 cup butter
1 1/2 cups all-purpose flour – divided use
2/3 cup granulated sugar
1/2 cup cottage cheese
1 large egg
2 tablespoons milk
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda

  • Preheat oven to 375°F (190°C).
  • In a large bowl beat butter until softened;stir in half of the flour, sugar, cottage cheese, egg, milk,baking powder, vanilla and baking soda; beat until combined.Stir in remaining flour.
  • Drop by teaspoonfuls and place 2-inchesapart on an ungreased baking sheet.
  • Bake for 9 to 11 minutes or until browned.Cool on baking sheet for 1 minute before removing to a wire rackto cool.

    Makes 36 cookies.

    Lenochka, Ricotta will not work for this recipe. My mom used to make these cookies for me all the time, so being home sick,I attempted to make them with ricotta. Not even close. Big dissappointment. Ricotta is a lot more moist than farmer s cheese, so it will take up more flour making cookies doughy instead of light and puffy.


    Roll the dough into a ball and then roll it out on a smooth, non-stick surface until it is ” thick. Use a round cookie cutter to cut out your cookies, cutting as many as you can out of your dough.
