Cornmeal Waffles recipe

Hearty cornmeal waffles, great for breakfastor dinner with a side of bacon, ham or sausage.

Recipe: Cornmeal Waffles

1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups milk
2 large eggs, lightly beaten
1/3 cup butter, melted

  • In a large bowl, combine cornmeal, flour,sugar, baking powder and salt.
  • In a separate bowl with an electric mixerat medium speed, beat together milk, eggs and butter. Add todry ingredients and mix to blend.
  • Pour batter onto a hot, greased waffleiron and bake until browned and crisp.
  • Serve with butter and syrup or jam.

    Makes 6 servings.

    Great for brunch. A nice alternative to sweet waffles, these cornmeal waffles are ironed with a slice of bacon, and served with a creamy cheese sauce.
