Corn Country Squares recipe

This country-style corn bread is wonderfulserved with whipped honey butter.

Recipe: Corn Country Squares

1 cup cornmeal
1 cup all-purpose flour
3/4 teaspoon salt
4 teaspoons baking powder
1/4 cup granulated sugar
2 large eggs
1 cup milk
1/4 cup vegetable oil

  • In a large bowl mix together well alldry ingredients; in a medium bowl beat together eggs, milk andoil. Mix wet ingredients into dry, stirring to blend quickly(do not overmix).
  • Pour batter into a greased 8 x 8-inchbaking pan.
  • Bake in a 400°F (205°C) oven for20 to 25 minutes, until very lightly browned on top.
  • Remove from oven, let cool slightly andcut into squares to serve.

    Makes 9 squares. Serves about 4.
