Corn Atole Beverage.

Corn Atole is a traditional Central Americanhot beverage. In Guatemala at 3:00 p.m., everyone goes out toget their “atole de elote” along with tamales or tostadasat a nearby food stand. If you like more cinnamon flavor, sprinklewith some ground cinnamon and savor this hot, comforting drink.

Recipe: Corn Atole Beverage

3 (15.25-ounce) cans sweet whole kernelcorn (about 4 cups) undrained – divided use; reserve 1/4 cupkernels for garnish2 1/2 cups water – divided use1/4 cup granulated sugar1 cinnamon stickPinch of salt2 (12-ounce) cans NESTL ® CARNATION®Evaporated Milk

  • Place 1 can of corn with its liquid and1/2 cup water in blender; cover. Blend until smooth. Pour throughfine mesh strainer into large saucepan, pressing pulp againstmesh to release liquid. Discard solids. Repeat with remainingcans of corn and 1 cup water.
  • Stir in sugar, cinnamon stick and salt.Bring to a boil. Reduce heat to low; stir occasionally.
  • Bring evaporated milk and remaining 1cup water to a boil in medium saucepan. Stir milk mixture intocorn mixture; remove from heat. Remove cinnamon stick. Pour intomugs. Garnish each serving with reserved corn kernels.

    Makes 8 servings.
