Cookies and Cream Cheesecake recipe

An easy, no-bake cheesecake with a centerlayer of crumbled cream-filled chocolate cookies and a cookiecrumb crust.

Recipe: Cookies and CreamCheesecake

2 cups chocolate cream-filled sandwichcookies, finely chopped
6 tablespoons butter or margarine, softened
1 package unflavored gelatin
1/4 cup cold water
1 (8-ounce) package cream cheese
1/2 cup granulated sugar
3/4 cup milk
1 cup whipping cream, whipped
1 1/4 cups chocolate cream-filled sandwich cookies, coarselychopped

  • Combine finely chopped cream sandwichcookies and softened butter; press onto the bottom of a 9-inchspringform pan.
  • Soften unflavored gelatin in cold waterand stir over low heat until dissolved. Combine cream cheeseand sugar, mixing at medium speed with an electric mixer untilwell blended Gradually add the gelatin mixture and milk, mixinguntil well blended. Chill until the mixture is thickened butnot set. Fold in cream whipped to soft peaks.
  • Reserve 1 1/2 cups of the cream cheesemixture and pour the remaining cream cheese mixture over thecrust. Top with coarsely chopped cream sandwich cookies and thereserved cream cheese mixture. Chill until firm.

    Makes 12 servings.
