Another delicious recipe from our Family-FavoriteRecipes Collection.
Recipe: Coconutty CaramelCandies
25 caramel candies, unwrapped3/4 cup, plus 3 tablespoons sweetenedflaked coconut – divided use1/2 cup white chocolate chips1/2 cup dry roasted peanuts
Makes 32 (1-inch) squares. (Do not doublethis recipe, make candy in individual batches.)
*Do not use waxed paper for lining thepan, as the mixture is too hot and the wax on the paper willmelt onto the candy, causing the paper to adhere to it when itcools.
Tip: For gift-giving or presentation, wrapcandies individually in small squares of waxed paper, twistingthe open ends on each side in the opposite direction to seal, like how saltwater taffy is wrapped.
