Coconut Yummies recipe

Super-easy coconut macaroon cookies.

Recipe: Coconut Yummies

1 (14-ounce) can sweetened condensed milk1 teaspoon vanilla extract1/8 teaspoon salt1 (14-ounce) package shredded sweetenedcoconut

  • Preheat oven to 350°F (190°C).Line two baking sheets with baking parchment paper or lightlygrease; set aside.
  • In a mixing bowl, combine sweetened condensedmilk, vanilla and salt, mixing well. Stirin coconut until just combined.
  • Drop mixture by heaping tablespoonfulsonto prepared baking sheets about 1-inch apart.
  • Bake for 10 to 12 minutes or until lightlybrowned. Remove from baking sheets and cool completely on wireracks.

    Makes about 2 dozen.

    Variation: Drizzle in a decorative fashionthe baked cookies with melted milk or semisweet chocolate.
