Coconut Raisin Bars recipe

These bar cookies are prepared easily inone bowl, combining flaked coconut, walnuts and raisins in abuttery cookie dough. With 31% fewer calories than the traditionalrecipe, they’ll be a favorite.

Recipe: Coconut Raisin Bars

2 large eggs, slightly beaten
1 cup Equal® Spoonful*
6 tablespoons stick butter, melted
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup toasted flaked coconut
1/2 cup chopped walnuts
1/2 cup seedless raisins

  • Beat eggs and Equal® in medium bowl.Mix in butter and vanilla. Stir combined flour, baking powderand salt into egg mixture. Mix in coconut, nuts and raisins.Spread batter in lightly sprayed 8-inch square pan.
  • Bake in preheated 350°F oven 18 to20 minutes or until wooden pick inserted in center comes outclean and top is golden. Cool completely on wire rack. Cut intobars.
  • Store in airtight containers at room temperature.

    Makes 16 bars.

    * May substitute 24 packets Equal sweetener
