Recipe: Coconut MacadamiaChocolate Brownies
1/2 cup butter 3/4 cup firmly packed light brown sugar 1 large egg 1 teaspoon vanilla extract 1 cup plus 2 tablespoons all-purpose flour 1 teaspoon baking powder 1/2 cup sweetened flake coconut 1/2 cup chopped macadamia nuts 1/2 cup chopped semisweet chocolate
Preheat oven to 350°F (175°C).Line an 8-inch square baking pan with foil, letting ends extendabove pan on 2 sides. Coat foil with vegetable cooking spray.
Melt butter in a medium saucepan overmedium heat. Stir in brown sugar and stir until mixture beginsto bubble. Remove from heat and cool for 20 minutes, or untillukewarm. Whisk in egg and vanilla until thoroughly blended.Stir in flour and baking powder until well mixed. Stir in halfthe coconut, macadamia nuts and chocolate. Spread in preparedpan then top with remaining coconut, nuts and chocolate.
Bake for 25 minutes, or until a woodenpick inserted in the center comes out clean. Let sit for 10 minutes,before carefully lifting brownies out of pan with the overhangingfoil. Cool on wire rack and cut as desired.
Makes 16 bars.
