Coconut Graham Cookies.

This yummy cookie has a wonderful chewytexture with a rich nutty-coconut flavor. You may want to hidethe cookie jar, because these sweet treats will disappear quickly.

Recipe: Coconut Graham Cookies

1 1/2 cups finely crushed graham crackercrumbs1/2 cup all-purpose flour2 teaspoons baking powder1 (14-ounce) can sweetened condensed milk1/2 cup butter, softened1 1/2 cups semisweet chocolate chips1 1/3 cups sweetened flaked coconut1 cup chopped walnuts (optional)

  • Preheat oven to 375°F (190°C).
  • In a medium bowl, whisk together the grahamcracker crumbs, flour and baking powder; set aside.
  • In a large mixing bowl, beat sweetenedcondensed milk and butter on medium-high speed until smooth.Stir in crumb mixture just until blended.Fold in raisins or chocolate chips (or both), coconut and walnuts,if using.
  • Drop by tablespoons onto a greased cookiesheet, pressing cookies to flatten slightly.
  • Bake for 9 to 10 minutes or until lightly browned. Cool 1 to 2 minutes beforeremoving from cookie sheets. Transferto wire racks to cool completely.

    Makes 3 1/2 dozen or 42 cookies.

    *Or use milk chocolate chips, chopped dates,golden raisins or a combination.
