Coconut Date Nut Balls recipe

Old-fashioned goodness, these festive treatsare packed with sweet, nutritious energy.

Recipe: Coconut Date NutBalls

1/2 cup graham cracker crumbs1 1/2 cups pitted dried dates1 1/4 cups sweetened flaked coconut, toastedand cooled1/4 cup honey1/2 cup walnuts, chopped fine

  • In a food processor blend the graham crackercrumbs, dates, 1/2 cup of coconut,and honey until mixture is just combined. Add walnuts andblend mixture until it forms a ball.
  • Place remaining coconut in a shallow dish.Form date mixture into walnut-sizeballs and roll in coconut, pressing coconut slightly to makeit adhere. Store in air-tight container incool place.

    Makes about 32 confections.

    It sounds like maybe your dates aren t soft enough. Try soaking them in warm water for 15 minutes before processing them to see if that helps! And I do make the balls pretty small, using my trusty cookie scooper, but I always eat at least two of them at a time, too!
