Coconut-Date Cookies recipe

Chewy oatmeal cookies loaded with coconut,dates and nuts.

Recipe: Coconut-Date Cookies

2 cups all-purpose flour1 teaspoon baking powder1 teaspoon baking soda1 teaspoon salt1 cup butter or margarine, softened1 cup granulated sugar1 cup firmly packed brown sugar2 large eggs1 teaspoon vanilla extract2 cups quick-cooking oats1 cup sweetened flaked coconut1 cup chopped pecans or walnuts1 cup finely chopped dates

  • Preheat oven to 350°F (175°C).
  • In a medium bowl whisk together the flour,baking powder, baking soda, and salt; set aside.
  • In a large mixing bowl, using an electricmixer at medium speed, cream the butter and both sugars untillight and fluffy. Add eggs and vanilla and blend well. Stir inflour mixture until just blended. Fold in oats, coconut, pecansand dates until blended.
  • Drop by heaping teaspoonfuls 2-inchesapart onto greased baking sheets.
  • Bake for 10 to 12 minutes or until lightlybrowned. Transfer to wire racks tocool completely.

    Makes about 7 dozen.

    I made 3 small changes I used the chopped dates from the store, flattened the cookies slightly with a fork before I baked them baked them for 10 minutes.
