Cocoa Cake with Broiled Topping recipe

This is a scrumptious cocoa snack cakewith a delicious broiled coconut topping.

Recipe: Cocoa Cake with BroiledTopping

Cake:1 1/2 cups all-purpose flour1 cup granulated sugar1/4 cup unsweetened cocoa powder1 teaspoon baking soda1/2 teaspoon salt1 cup water1/4 cup plus 2 tablespoons vegetable oil1 tablespoon white vinegar
1 teaspoon vanilla extractBroiled Topping:1/4 cup butter, softened
1/2 cup packed light brown sugar
1/2 cup coarsely chopped nuts
1/2 cup sweetened flaked coconut
3 tablespoons light cream or evaporated milk

  • Heat oven to 350°F (175°C).Grease and flour 8-inch square baking pan;set aside.
  • For Cake: In a large bowl, stir togetherflour, sugar, cocoa, baking soda and salt.
  • Add water, oil, vinegar and vanilla; beatwith spoon or whisk just until batter is smooth and ingredientsare well blended.
  • Pour batter into prepared pan.
  • Bake 35 to 40 minutes or until woodenpick inserted in center comes out clean.
  • For Broiled Topping: Stir together allingredients in small bowl until well blended.
  • Spread topping on warm cake.
  • Set oven to Broil; place pan about 4-inchesfrom heat. Broil 3 minutes or until top is bubbly and goldenbrown. Remove from oven.
  • Cool completely in pan on wire rack.

    Makes 9 servings.
