Lemon-scented, sugar-topped butter cookies.
Recipe: Classic Butter Cookies
1 cup unsalted butter, softened
Preheat oven to 350°F (175°C).
In a medium bowl, cream butter, 1/2 cupsugar, vanilla, and lemon zest with an electric mixer. Mix inflour and blend until all ingredients are combined, about 2 minutes.
Divide dough in half and roll into twoequal logs about 6-inches in length. Cover in plastic wrap andrefrigerate for 15 minutes.
Unwrap dough and slice into 1/4-inch thickrounds. Place on an ungreased cookie sheet, sprinkle with 2 tablespoonsgranulated sugar.
Bake for 10 to 12 minutes. Do not allowcookies to brown.

Makes 36 cookies.
