Cinnamon Applesauce Coffeecake recipe

Cinnamon-scented applesauce coffeecake,drizzled with a sweet vanilla glaze.

Recipe: Cinnamon ApplesauceCoffeecake

Coffeecake:1 cup butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup applesauce
2 1/2 cups all-purpose flour2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans
Easy Glaze:3/4 cup powdered sugar2 teaspoons butter, melted1/4 teaspoon vanilla extract1 to 2 tablespoons milk

  • Heat oven to 350°F (175°C). Lightlygrease 13 x 9 x 2-inch baking pan.
  • In a large bowl, beat butter and sugaron medium speed of mixer until well blended. Beat in eggs andvanilla. Mix in applesauce.
  • Combine flour, cinnamon, baking soda andsalt; gradually add to butter mixture, beating until well blended.Stir in pecans, if desired.
  • Spread into prepared pan.
  • Bake 30 to 35 minutes or until woodenpick inserted in center comes out clean. Cool completely in panon wire rack.
  • For Glaze: Stir together all ingredients,adding enough milk for desired consistency. Drizzle coffeecakewith glaze. Serve warm.

    Makes 12 to 15 servings.
