Chunky Peanut Cookies recipe

An all-time favorite peanut cookie.

Recipe: Chunky Peanut Cookies

1 3/4 cups all-purpose flour
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1/2 cup butter or margarine, softened
2 large eggs
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
2 cups salted peanuts

  • Heat oven to 350°F (175°C).
  • Combine all ingredients except peanutsin large mixer bowl. Beat at low speed, scraping bowl often,until well mixed. Stir in peanuts by hand.
  • Drop dough by rounded teaspoonfuls 2-inchesapart onto greased cookie sheets.
  • Bake for 8 to 12 minutes or until lightlybrowned.

    Makes 4 dozen cookies.

    Hi Molly, Because the separating natural peanut butter will be much too oily for this recipe, causing the cookies to spread and thin out way too much. When placing it on the cookie sheet do you make them flatter and not as high?
