Christmas Morning Sausage Ring recipe

Instead of ‘meatloaf’, this is a ‘sausageloaf’ baked in a ring mold and presented on a serving platterwith fluffy scrambled eggs piled in the center.

Recipe: Christmas MorningSausage Ring

2 pounds bulk sausage
1 1/2 cups crushed saltine crackers
2 large eggs
1/2 cup milk
1/4 cup chopped peeled onion
1 cup chopped, cored, peeled apple
6 large eggsSalt and pepper to taste

  • Preheat oven to 350°F (175°C).
  • In a bowl, combine sausage, crackers,eggs, milk, onion and apple; mix well. Pat into a greased 6-cupring mold. Unmold sausage mixture from the pan onto a bakingsheet. Bake 1 hour.
  • Scramble the eggs in a skillet, seasonto taste with salt and pepper and spoon into the center of cookedsausage ring.
  • The sausage mixture can be assembled thenight before and refrigerated in the mold. In the morning justunmold sausage mixture and cook as directed.

    Makes 8 servings.
