Christmas Crunchies recipe

Christmas or anytime, these are great cookieswith a definite crunch!

Recipe: Christmas Crunchies

1 cup all-purpose flour1/4 teaspoon baking powder1/2 teaspoon baking soda1/4 teaspoon salt1/2 cup butter or margarine, softened1/2 cup firmly packed brown sugar1 large egg1/2 teaspoon vanilla extract1 cup old-fashioned oats1 cup corn flakes1/2 cup sweetened shredded coconut1/2 cup coarsely chopped pecans

  • Preheat oven to 350°F (175°C).
  • Combine flour, baking powder, baking sodaand salt in a small bowl; set aside.
  • In a large mixing bowl, cream butter andsugar until light and fluffy. Add egg and vanillaand beat well. Stir in flour mixture until just mixed. Stir inoats, corn flakes, coconut and pecans.
  • Shape dough into 1-inch balls; place 2-inchesapart on lightly greased baking sheets.
  • Bake for 10 to 12 minutes. Transfer towire racks to cool.

    Makes about 3 1/2 dozen cookies.

    I m so glad that I found this recipe because it was quick, easy, affordable, and everyone loved it- it was a huge hit! Do u think the funfetti can be frozen?
