Chocolate Zucchini Cake recipe

A moist and delicious honey-sweetened chocolatezucchini spice cake.

Recipe: Chocolate ZucchiniCake

1/2 cup butter
1/4 cup vegetable oil
2/3 cup honey
2 large eggs
1 teaspoon vanilla extract
1/3 cup buttermilk
2 1/2 cups all-purpose flour
4 tablespoons unsweetened cocoa powder
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2 cups grated zucchini
1 cup chopped nuts, optional

  • Preheat oven to 350°F (175°C).Grease and flour a 13 x 9 x 2-inch pan; set aside.
  • In the bowl of an electric mixer, beattogether butter, oil and honey. Add eggs, vanilla and buttermilk;mix well.
  • Combine dry ingredients and add to honeymixture; mix just until combined. Stir in zucchini and nuts,if desired. Pour into prepared pan.
  • Bake 30 minutes or until cake tests done.
  • Cool on wire rack. Dust with powderedsugar, if desired.
