Chocolate Truffle Cheesecake recipe

Recipe: Chocolate TruffleCheesecake

Crust:1 1/2 cups chocolate wafer crumbs2 tablespoons granulated sugar1/4 cup butter, meltedFilling:1/4 cup semisweet chocolate chips1/4 cup heavy cream3 (8-ounce) packages cream cheese, softened1 cup granulated sugar1/3 cup unsweetened baking cocoa3 large eggs1 teaspoon vanilla extractTopping:1 1/2 cups semisweet chocolate chips1/4 cup heavy cream1 teaspoon vanilla extract

  • In a small bowl, combine cookie crumbsand sugar; stir in butter. Press onto the bottom and 1 1/2-inchesup the sides of a greased 9-inch springform pan. Bake at 350°F(175°F) for 10 minutes. Cool on a wire rack. Reduce heatto 325°F (160°C).
  • In a saucepan over low heat, melt chocolatechips; stir until smooth. Remove from the heat; add cream andmix well. Set aside.
  • In a mixing bowl, beat cream cheese andsugar until smooth. Add cocoa and beat well. Add eggs; beat onlow just until combined. Stir in vanilla and reserved chocolatemixture just until blended. Pour over crust. Bake for 45 to 50minutes or until center is almost set.
  • For Topping, melt chocolate chips in asaucepan over low heat, stirring until smooth. Remove from theheat. Stir in cream and vanilla; mix well. Spread over filling;Refrigerate overnight. Carefully run a knife around edge of panto loosen. Remove sides of pan. Just before serving, garnishwith whipped cream, if desired.

    Makes 12 servings.

    Put the cheese, soured cream, sugar and eggs in a food processor and blend until smooth. With the motor running, slowly add the melted chocolate and blend until thoroughly combined. Oh boy! Chocolate, cheesecake – what’s not to like? And everyone knows that Belgian chocolate is the best in the world. Just thinking about this makes us weak at the knees – not one for the faint hearted.
