Recipe: Chocolate TruffleCheesecake
Crust:1 1/2 cups chocolate wafer crumbs2 tablespoons granulated sugar1/4 cup butter, meltedFilling:1/4 cup semisweet chocolate chips1/4 cup heavy cream3 (8-ounce) packages cream cheese, softened1 cup granulated sugar1/3 cup unsweetened baking cocoa3 large eggs1 teaspoon vanilla extractTopping:1 1/2 cups semisweet chocolate chips1/4 cup heavy cream1 teaspoon vanilla extract
In a small bowl, combine cookie crumbsand sugar; stir in butter. Press onto the bottom and 1 1/2-inchesup the sides of a greased 9-inch springform pan. Bake at 350°F(175°F) for 10 minutes. Cool on a wire rack. Reduce heatto 325°F (160°C).
In a saucepan over low heat, melt chocolatechips; stir until smooth. Remove from the heat; add cream andmix well. Set aside.
In a mixing bowl, beat cream cheese andsugar until smooth. Add cocoa and beat well. Add eggs; beat onlow just until combined. Stir in vanilla and reserved chocolatemixture just until blended. Pour over crust. Bake for 45 to 50minutes or until center is almost set.
For Topping, melt chocolate chips in asaucepan over low heat, stirring until smooth. Remove from theheat. Stir in cream and vanilla; mix well. Spread over filling;Refrigerate overnight. Carefully run a knife around edge of panto loosen. Remove sides of pan. Just before serving, garnishwith whipped cream, if desired.
Makes 12 servings.
