Chocolate Squares recipe

Applesauce is used to moisten these chocolatedessert squares and cut the fat content.

Recipe: Chocolate Squares

Vegetable cooking spray
3/4 cup all-purpose flour
1/3 cup baking cocoa
1/3 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup granulated sugar
2 large egg whites
1/2 cup evaporated milk
3/4 cup applesauce
1/2 cup light corn syrup
1 1/2 teaspoons vanilla extract – divided use
2 cups powdered sugar, sifted
2 tablespoons baking cocoa
1 tablespoon milk

  • Preheat oven at 350°F (175°C).Grease 9 x 9 x 2-inch baking pan.
  • Sift together flour, unsweetened bakingcocoa, cornstarch, baking powder, baking soda and salt in a mediumbowl. Mix in sugar; set aside.
  • Combine egg whites with evaporated milkin a large bowl. Mix in applesauce, corn syrup and two thirdsof the vanilla. Add flour mixture; blend well.
  • Pour batter into prepared pan and bake35 minutes or until an inserted toothpick comes out clean. Removefrom oven. Cool completely on rack before frosting.
  • Frosting: Sift together powdered sugarand unsweetened baking cocoa. Mix in remaining third vanillaand milk. Beat until smooth, cautiously adding water if needed.

    Makes 9 bars.
