Chocolate Peanut Cookies recipe

Chopped honey roasted peanuts offer a crunchof flavor in these cookies.

Recipe: Chocolate PeanutCookies

4 (1-ounce) squares semisweet baking chocolate
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or margarine
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
2 teaspoons vanilla extract
1 large egg
1 1/2 cups coarsely chopped honey-roasted peanuts

  • Preheat oven to 375°F (190°C).
  • Combine flour, baking soda and salt insmall bowl. Beat butter, brown sugar, granulated sugar and vanillaextract in large mixer bowl until creamy. Beat in egg and meltedchocolate. Beat in flour mixture. Stir in nuts. Drop by roundedtablespoon onto ungreased baking sheets.
  • Bake for 8 to 9 minutes or until edgesare set but centers are still slightly soft. Cool on baking sheetsfor 3 minutes; remove to wire racks to cool completely.

    Makes 30 cookies.
