1 3/4 cups all-purpose flour2 cups granulated sugar3/4 cup unsweetened cocoa powder
2 teaspoons baking soda1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk*
2 large eggs
1 cup boiling water
1/2 cup vegetable oil
1 teaspoon vanilla extractVanilla Frosting:1/4 cup butter, softened1/4 cup vegetable shortening2 teaspoons vanilla extract4 cups powdered sugar – divided use3 to 4 tablespoons milkChocolate Frosting:1/2 cup butter2/3 cup unsweetened cocoa powder3 cups powdered sugar3 tablespoons milk1 teaspoon vanilla extract
Makes 30 cupcakes.
*Or substitute by placing 1 tablespoonwhite vinegar into a measuring cup and adding enough milk toequal 1 cup.
