A moist, homemade baked chocolate cakeis topped with miniature marsmallows returned to the oven tomelt and then drizzled with a chocolate marshmallow glaze.
Recipe: Chocolate MarshmallowCake
1/2 cup butter2 (1-ounce) squares baking chocolate1 cup all-purpose flour1/2 teaspoon baking powder1/4 teaspoon baking soda1/4 teaspoon salt2 large eggs1 cup granulated sugar1/2 cup applesauce1 teaspoon vanilla extract1 (10 1/2-ounce) package miniature marshmallows,divided useGlaze:1/2 cup granulated sugar2 tablespoons milk2 tablespoons butter1/4 cup semisweet chocolate chips
In a saucepan melt butter over mediumheat; remove pan and add chocolate. Let stand a few minutes andthen stir until chocolate has melted. Cool for 10 minutes.
Combine flour, baking powder, baking sodaand salt; set aside.
In a mixing bow, beat eggs, sugar, applesauceand vanilla. Stir in chocolate mixture. Add dry ingredients;mix well.
Pour into a greased 13 x 9 x 2-inch bakingpan.
Bake at 350°F (175°C) for 20 to30 minutes or until cake tests done when wooden pick insertedin center comes out clean.
Set aside 1/2 cup marshmallows for theglaze. Sprinkle remaining marshmallows over cake. Return to theoven for 2 minutes or until marshmallows are softened.
In a saucepan, combine sugar, milk andbutter. Bring to a boil; boil for 1 1/2 minutes. Remove fromthe heat; stir in chocolate chips and reserved 1/2 cup marshmallowsuntil melted. Quickly drizzle over the cake. (Glaze will hardenas it cools.)
