Chocolate Dipped Cranberry Cookies.

Recipe: Chocolate DippedCranberry Cookies

1 cup vegetable shortening1 cup granulated sugar1 teaspoon vanilla extract1 large egg2 cups all-purpose flour1 teaspoon baking powder1/2 teaspoon salt2 cups OCEAN SPRAY® Fresh or FrozenCranberries, coarsely chopped1 1/3 cups (8 ounces) chocolate chips1 1/4 cups chopped nuts

  • Preheat oven to 350°F (175°C).Grease baking sheets.
  • Combine flour, baking powder and saltin medium bowl. Beat vegetable shortening and sugar in largemixer bowl until light and fluffy. Add vanilla extract and egg;mix well. Gradually beat in flour mixture until a soft mixtureforms. Stir in cranberries. Drop by rounded teaspoonfuls ontoprepared baking sheets.
  • Bake for 10 minutes or until golden brown.Let stand for 2 minutes; remove to wire racks to cool completely.
  • Melt chocolate chips in uncovered, microwave-safebowl on HIGH (100%) power for 1 minute; STIR. Morsels may retainsome of their original shape. If necessary, microwave at additional10 to 20-second intervals, stirring until smooth. Dip half ofeach cookie into melted chocolate and then into nuts. Allow chocolateto dry completely.

    Makes 36 (3 dozen) cookies.
