Crispy rice cereal adds a nice crunch tochocolate-covered peanut butter balls.
Recipe: Chocolate Crisp PeanutButter Balls
1 pound powdered sugar
Combine powdered sugar, peanut butterand butter in a large bowl. Beat with an electric mixer on mediumuntil smooth. Add cereal and gently stir until thoroughly combined.
In a microwave-safe bowl, melt chocolateon HIGH for 2 minutes; stir. Melt in 30-second increments, stirringafter each one, until completely melted.
Roll peanut butter mixture into 1-inchballs. Using a fork or skewer, dip each ball in chocolate untilcompletely covered. Gently shake off excess.
Place peanut butter balls on a cookiesheet covered with wax paper until chocolate is firm. Refrigerateif kitchen is warm. Store in a tightly sealed container at roomtemperature.
2 cups creamy peanut butter
1/2 cup unsalted butter, melted
2 cups crispy rice cereal
2 (12-ounce) packages semisweet chocolate chips
Makes 100 peanut butter balls.
