Chocolate-Covered Coconut Mountains recipe

Little ‘mountains’ of moist coconut cookiescovered in semisweet chocolate.

Recipe: Chocolate-CoveredCoconut Mountains

1/4 cup butter, melted2 large eggs2/3 cup granulated sugar2 cups sweetened shredded coconut1 cup semisweet chocolate chips1 1/2 teaspoons vegetable shortening

  • Preheat oven to 350°F (175°C).
  • Beat eggs and sugar together until fluffy.Stir in coconut and butter.
  • Drop dough by spoonfuls onto non-stickbaking sheets, about one inch apart. Bake for about 10 minutes.Cool on wire racks.
  • Melt chocolate and shortening togetherin microwave on high for 1 to 2 minutes, stirringevery 30 seconds. Drizzle over cooled cookies. Storein tightly sealed container.

    Makes 2 1/2 dozen.

    My old recipe also called for a couple tbsp of flour, obviously an attempt to solve the drippy macaroon now that I think about it. I can t wait to get to the store and start this recipe. Can I use unsweetened dedicated coconut?
