The neat trick about these cookies arethat they are frosted before they’re baked! Under the frostinghides a plump, red cherry!
Recipe: Chocolate-CoveredCherry Cookies
1 1/2 cups all-purpose flour1/2 cup unsweetened cocoa powder1 (10-ounce) jar maraschino cherries (42to 48)1/2 cup butter, softened1 cup granulated sugar1/4 teaspoon baking soda1/4 teaspoon baking powder1/4 teaspoon salt1 large egg1 1/2 teaspoons vanilla extract1 (6-ounce) package semisweet chocolatechips1/2 cup sweetened condensed milk
Combine the flour and coca powder. Setaside.
Drain the maraschino cherries, reservingjuice. Place cherries on paper towels to drain thoroughly. Setaside.
In a large mixing bowl, beat butter withan electric mixer on medium to high speed for 30 seconds. Addthe sugar, baking soda, baking powder and salt; beat until combined.Beat in egg and vanilla until combined. Stir in flour mixtureuntil just combined.
Shape dough into 1-inch balls. Place onan ungreased cookies sheet. Press your thumb into the centerof each ball. Place a cherry in each center.
For frosting, in a small saucepan combinechocolate chips and sweetened condensed milk. Cook and stir untilchocolate is melted. Stir in 4 teaspoons of the reserved cherryjuice.
Spoon about 1 teaspoon of the frostingover each cherry, spreading to cover cherry. (If necessary, thinfrosting with additional cherry juice.)
Bake in a 350°F (175°C) oven forabout 10 minutes or until edges are firm. Cool on cookie sheetfor 1 minutes. Transfer to a wire rack to cool completely.
Makes 42 to 48 cookies.
