Chocolate-Coconut Cake recipe

A ‘cake-mix-easy’ baked chocolate layercake with a fluffy marshmallow coconut filling and iced witha creamy chocolate frosting.

Recipe: Chocolate-CoconutCake

1 (18.25-ounce) package chocolate cakemix
2 large eggs
1/4 cup vegetable oil
1 cup granulated sugar
1 1/2 cups NESTL ® CARNATION® Evaporated Milk- divided use
15 regular marshmallows
2 cups flaked coconut
1 teaspoon vanilla extract
1/2 cup butter, softened
2 cups powdered sugar
1/2 cup NESTL ® TOLL HOUSE® Baking Cocoa

  • Prepare and bake chocolate cake mix accordingto instructions on package.
  • In a heavy saucepan, combine granulatedsugar, 1 cup evaporated milk, and marshmallows; bring to a boiland cook for 5 minutes, stirring constantly. Remove from theheat; then stir in flaked coconut and vanilla extract. Cool andspread between the cake layers.
  • In a medium bowl, combine softened butter,powdered sugar, unsweetened baking cocoa, and 1/2 cup evaporatedmilk. Beat on high speed of an electric mixer until smooth andcreamy. Frost the top and sides of the cake.

    If you give the cake plenty of time before cutting it, the chocolate syrup will be soaked it through the holes you made before pouring the syrup. Has anyone else made this recipe?
