Chocolate Chip Snack Cake recipe

Use of an all-purpose baking mix makesthis a quick and easy homemade cake which features a scrumptiouscrumb topping and bits of chocolate in every bite.

Recipe: Chocolate Chip SnackCake

Cake:2 cups all-purpose biscuit baking mix
1/4 cup granulated sugar
2/3 cup milk
1 large egg
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
Topping:1/4 cup granulated sugar
1/4 cup light brown sugar, packed
1/4 cup all-purpose biscuit baking mix
1/4 cup butter, softened
1 teaspoon ground cinnamon

  • Heat oven to 350°F (175°C). Greasean 8-inch square baking pan with vegetable shortening.
  • For Cake: In large bowl, combine biscuitmix, sugar, milk, egg and vanilla; beat on low speed of mixeruntil moistened. Increase speed to medium; beat 2 minutes untilsmooth. Pour half of batter into prepared pan. Sprinkle chocolatechips over batter. Top with remaining batter, completely coveringchips.
  • For Topping: Stir together all ingredientsin bowl until well blended. Sprinkle evenly over batter.
  • Bake 25 to 30 minutes or until top springsback when touched lightly. Cool completely in pan on wire rack.

    Makes 9 servings.
