Crisp, light and airy chocolate meringuecookies laced with chocolate chips.
Recipe: Chocolate Chip MeringueDrops
2 large egg whites1/2 cup granulated sugar1 teaspoon vanilla extract3 tablespoons unsweetened baking cocoa1/2 cup semisweet chocolate chips
Preheat oven to 250°F (120°C).Line 2 baking sheets with aluminum foil orparchment and set aside.
In large bowl, beat the egg whites atmoderately high speed until they holdstiff peaks. Beat in the sugar one tablespoon at a time, thenbeat in the vanilla. Reduce speed tolow and beat in cocoa. With rubberspatula, fold in chocolate chips.
Drop mixture by rounded tablespoonfulonto baking sheets, spacing 1-inchapart and bake for 1 hour. Turn off oven and dry cookies in oven2 hours longer. Do not open oven door duringthis time. Remove from pan and storein air tight container.
Makes 40 cookies.
