Adding chocolate chips to this fluffy sweetconfection is simply gilding the lily! Be sure you make divinityon a relatively dry day. If the humidity level is high (above60 percent), the sugar in the candy will absorb moisture fromthe air, and the divinity will not hold its shape.
Recipe: Chocolate Chip Divinity
3 cups granulated sugar3/4 cup water3/4 cup light corn syrup2 large egg whites1 (6-ounce) package semisweet chocolatechips (1 cup)1 teaspoon vanilla extract
Combine first 3 ingredients in a heavy3-quart saucepan; stir well. Cook over low heat, stirring constantly,until sugar dissolves. Cover and cook over medium heat 2 to 3minutes to wash down sugar crystals from sides of pan. Uncoverand cook, without stirring, until mixture reaches hard ball stageor until candy thermometer register 260°F (125°C). Removefrom heat.
Beat egg whites in a large mixing bowlat high speed of an electric mixer until stiff peaks form. Pourhot sugar mixture in a very thin stream over beaten egg whitewhile beating constantly at high speed until mixture holds itsshape (5 to 10 minutes). Quickly fold in chocolate chips andvanilla.
Drop mixture by rounded teaspoonfuls ontoa sheet of wax paper. Cool completely.
Makes about 2 pounds.
