Chocolate Chip Divinity recipe

Adding chocolate chips to this fluffy sweetconfection is simply gilding the lily! Be sure you make divinityon a relatively dry day. If the humidity level is high (above60 percent), the sugar in the candy will absorb moisture fromthe air, and the divinity will not hold its shape.

Recipe: Chocolate Chip Divinity

3 cups granulated sugar3/4 cup water3/4 cup light corn syrup2 large egg whites1 (6-ounce) package semisweet chocolatechips (1 cup)1 teaspoon vanilla extract

  • Combine first 3 ingredients in a heavy3-quart saucepan; stir well. Cook over low heat, stirring constantly,until sugar dissolves. Cover and cook over medium heat 2 to 3minutes to wash down sugar crystals from sides of pan. Uncoverand cook, without stirring, until mixture reaches hard ball stageor until candy thermometer register 260°F (125°C). Removefrom heat.
  • Beat egg whites in a large mixing bowlat high speed of an electric mixer until stiff peaks form. Pourhot sugar mixture in a very thin stream over beaten egg whitewhile beating constantly at high speed until mixture holds itsshape (5 to 10 minutes). Quickly fold in chocolate chips andvanilla.
  • Drop mixture by rounded teaspoonfuls ontoa sheet of wax paper. Cool completely.

    Makes about 2 pounds.
