Recipe: Chocolate Chip CookieDough Cheesecake
Crust:1 3/4 cups crushed chocolate chip cookiesor chocolate wafer crumbs1/4 cup granulated sugar1/3 cup butter, meltedFilling:3 (8-ounce) packages cream cheese, softened1 cup granulated sugar3 large eggs1 cup sour cream1/2 teaspoon vanilla extractCookie Dough:1/4 cup butter, softened1/4 cup granulated sugar1/4 cup firmly packed brown sugar1 tablespoon water1 teaspoon vanilla extract1/2 cup all-purpose flour1 1/2 cups miniature semisweet chocolatechips – divided use
In a small bowl, combine cookie crumbsand sugar; stir in butter. Press onto the bottom and 1-inch upthe sides of a greased 9-inch springform pan; set aside.
In a mixing bowl, beat cream cheese andsugar until smooth. Add eggs; beat on low just until combined.Add sour cream and vanilla; beat just until blended. Pour overcrust; set aside.
In another mixing bowl, cream butter andsugars on medium speed for 3 minutes. Add water and vanilla.gradually add flour. Stir in 1 cup chocolate chips. Drop doughby teaspoonfuls over filling, gently pushing dough below surface(dough should be completely covered by filling).
Bake at 350°F (175°C) for 45 to55 minutes or until center is almost set.
Cool on a wire rack for 10 minutes.
Carefully run a knife around edge of panto loosen; cool 1 hour longer.
Refrigerate overnight and remove sidesof pan.
Before serving, sprinkle with remainingchocolate chips.
Makes 12 to 14 servings.
