Chocolate Chip Cookie Bites.

These Chocolate Chip Cookie Bites are madewith rice flour. Chopped nuts add some crunchiness. This easy-to-makerecipe is a terrific alternative to use when you need to avoidwheat flour.

Recipe: Chocolate Chip CookieBites

1 1/2 cups rice flour1/2 teaspoon baking soda1/2 teaspoon salt1/4 cup (1/2 stick) butter, softened1/2 cup granulated sugar1/2 cup lightly packed brown sugar1/2 teaspoon vanilla extract2 large eggs1 cup (6 ounces) NESTL ® TOLLHOUSE® Semi-Sweet Chocolate Morsels1/2 cup chopped nuts

  • Combine rice flour, baking soda and saltin small bowl. Beat butter, granulated sugar, brown sugar andvanilla extract in large mixer bowl until light. Add eggs oneat a time, beating well after each addition. Gradually add riceflour mixture. Stir in morsels and nuts. Cover; refrigerate for1 hour.
  • Preheat oven to 375°F (190°C).Line baking sheets with parchment paper or lightly grease. Rolldough into 3/4-inch balls. Place 2 inches apart on prepared bakingsheets.
  • Bake for 8 to 10 minutes or until goldenbrown. Cool on baking sheets for 2 minutes; remove parchmentpaper with cookies to wire racks to cool completely. Store inairtight container.

    Makes 48 (4 dozen) cookies.
