Chocolate Chip Apricot Cookies recipe

Chocolate chip cookies enriched with wholewheat, oats and chopped dried apricots.

Recipe: Chocolate Chip ApricotCookies

3/4 cup vegetable shortening
1 1/2 cups packed brown sugar
1 large egg
1/4 cup water
1 teaspoon vanilla extract
1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups quick cooking oats
1 cup dried apricots, chopped
1 cup semisweet chocolate chips

  • Preheat oven to 350°F (175°C).Lightly grease a baking sheet; set aside.
  • In a large mixing bowl cream shorteningand brown sugar until light and fluffy. Add egg, water, and vanilla;beat well.
  • In another bowl combine flour, bakingsoda and salt; stir into creamed mixture. Stir in oats, apricotsand chocolate chips.
  • Drop by teaspoonfuls 2 inches apart ontobaking sheet; flatten slightly.
  • Bake for 10 to 12 minutes or until goldenbrown.
  • Cool completely on a wire rack.

    Makes 36 cookies.
