Chocolate Carmelitas recipe

Yummy! Soft caramel candies are baked insidechocolate cookie dough…and then the cookies are drizzled witha chocolate glaze.

Recipe: Chocolate Carmelitas

2 cups all-purpose flour1/2 teaspoon baking powder1/2 teaspoon salt6 tablespoons unsweetened baking cocoa1/2 cup chopped pecans1/2 cup plus 2 tablespoons butter, softened1 cup granulated sugar1 large egg1/3 cup milk1 teaspoon vanilla extract18 soft caramels, cut in halfChocolate Glaze (See below)

  • In medium bowl combine flour, baking powder,salt, baking cocoa and pecans. Mix well. Set aside.
  • In mixing bowl cream butter and sugaruntil fluffy, add the egg, milk andvanilla; continue beating for another2 minutes. Stir in flour mixture to form soft dough.
  • Divide dough in half, wrap in plasticand chill 1 to 2 hours.
  • Preheat oven to 400°F (205°C).
  • Mold dough by rounded teaspoons arounda each caramel half. Place on ungreasedcookie sheet and bake 7 minutes to8 minutes.
  • Transfer cookies immediatelyto wire cookie racks or paper towels to cool.After cookies have cooled, swirl cookies with chocolateglaze.

    Chocolate Glaze:

    1 1/2 cups powdered sugar2 tablespoons light corn syrup3 tablespoons unsweetened baking cocoa1 tablespoon butter, melted2 to 3 tablespoons hot water

  • In a small bowl, blend together powderedsugar, corn syrup, cocoa, butter andhot water.

    Makes 3 dozen.
