Chocolate Caramels.

Homemade chocolate caramels will livenup any party.

Recipe: Chocolate Caramels

1 cup butter1 cup granulated sugar
1 cup packed dark brown sugar
1 cup light corn syrup
1 (14-ounce) can NESTL ® CARNATION® SweetenedCondensed Milk
1 (2-ounce) NESTL ® TOLL HOUSE® Unsweetened ChocolateBaking Bar
1 teaspoon vanilla extract

  • Line 8-inch-square baking pan with foil;grease.
  • Combine butter, granulated sugar, brownsugar and corn syrup in heavy-duty 2 1/2-quart saucepan. Cookover medium heat, stirring constantly until mixture boils andbutter is melted. Add condensed milk and chocolate; stir constantlyuntil chocolate is melted. Cook over medium-low heat, stirringfrequently until mixture reaches 245° F. on candy thermometer,about 25 to 35 minutes. Remove from heat; stir in vanilla extract.Immediately pour into prepared pan. Cool.
  • Lift from pan; remove foil. Cut into 1-inchsquares and wrap individually in plastic wrap, twisting ends.Store at room temperature; use within 7 to 10 days.

    Makes 64 pieces.

    Note: If caramels become too firm to cut,soften slightly in microwave oven on DEFROST for about 2 minutes;or warm in 200°F oven for about 5 minutes.

    Thanks so much for all your yummy recipes! I just made these chocolate caramels and am waiting for them to cool to see how they turned out. It s my first time making candy. What do you think about using unsweetened chocolate, you know that baking chocolate that is in 1 oz. squares? There s already a lot of sugar in the other ingredients. Can you use chocolate chips? And do they have to be bittersweet? Would semi sweet or milk chocolate work equally as well? I ve always been intimidated by candy making, but this recipe is making me change my mind.
