Recipe: Choco-ButterscotchBanana Pops
4 medium-size bananas Plastic straws, cut into 2-inch pieces (or wooden ice cream sticks,etc.) 1/2 cup butterscotch chips, 1/2 cup semisweet chocolate chips 1 tablespoon vegetable shortening (do not use butter, margarineor oil)Roll-ins:Chocolate or colored candy sprinklesFinely chopped dry roasted peanutsToasted flaked coconut
Line a cookie sheet with wax paper.
Peel bananas and cut into 1-inch pieces.
Place a straw piece halfway into eachbanana piece. Place on prepared tray; cover and freeze untilfirm.
In small microwave-safe bowl, place butterscotchchips, chocolate chips and shortening. Microwave at HIGH (100%)1 minute; stir. Continue heating 15 seconds at a time or untilmixture is melted and smooth when stirred.
Covering each banana piece completely,dip banana pieces into butterscotch/chocolate mixture and rollin candy sprinkles, chopped peanuts or toasted coconut as desired.Place back on prepared cookie sheet. Cover; return to freezeruntil set.
Makes about 1 1/2 dozen snacks.
