Chilled Asparagus with Hazelnuts recipe

The citrus and nut flavors blend to complementthe glories of fresh asparagus.

Recipe: Chilled Asparaguswith Hazelnuts

1 to 1 1/2 pounds fresh asparagusDressing:
1/4 teaspoon freshly grated orange zest
2 teaspoons fresh orange juice
1 teaspoon fresh lemon juice
2 tablespoons olive oil2 tablespoons finely chopped roasted hazelnuts

  • Steam asparagus until crisp-tender. Drainwell; chill.
  • Whisk together all ingredients for thedressing, except nuts. Add salt and pepper to taste. Drizzleover chilled asparagus, then top with the chopped hazelnuts.

    Serves 4 to 6.

    Note: If you like, you can use the dressingon warm asparagus as well.
