Chili ‘ n’ Cheese Casserole recipe

This winner of a chili and cheese casserole,topped with corn bread biscuits, is sure to please.

Recipe: Chili ‘ n’ CheeseCasserole

2 teaspoons chili powder1 teaspoon ground cumin1/2 teaspoon garlic powder1 pound ground beef1 large onion, chopped1 large green pepper, chopped1 (16-ounce) can kidney beans, rinsedand drained1 (15 1/4-ounce) can whole kernel corn,drained1 (15-ounce) can tomato sauce1 (14 1/2-ounce) can diced tomatoes, undrained1 (4-ounce) can chopped green chiles1 teaspoon salt1/4 teaspoon pepper1/2 teaspoon brown sugar2 cups shredded cheddar cheeseCorn Bread Biscuits:1 cup all-purpose flour1 cup cornmeal2 teaspoons baking powder1/2 teaspoon salt1 large egg1/2 cup milk1/2 cup sour cream

  • In a small bowl or cup combine chili powder,ground cumin and garlic powder; set aside.
  • In a Dutch oven over medium heat, cookbeef, onion and green pepper until meat is well browned; drain.Stir in reserved spice mixture and cook, stirring constantly,for about 1 minute. Add remaining ingredients; bring to a boil,stirring occasionally. Reduce heat; cover and simmer for 10 to15 minutes.
  • Meanwhile, combine flour, cornmeal, bakingpowder and salt in a bowl. Beat egg, milk and sour cream untilsmooth; stir into dry ingredients just until moistened.
  • Transfer chili to an ungreased 13 x 9x 2-inch baking dish. Sprinkle with cheddar cheese. Drop batterby rounded teaspoonfuls onto chili mixture.
  • Bake, uncovered, at 400°F (205°C)for 18 to 20 minutes or until biscuits are lightly browned.

    Makes 8 servings.

    Molly, it really depends on how you want this to be more mac and cheese or more chili. This is really a hybrid recipe, so although I could ve added more spices, I wanted to keep a nice balance without overpowering any of the flavors. Holy smackeroni and cheese Batman!! I just saw this on someone s board on pinterest, came here, found your crazy awesome site, and have made this for supper. This is so deliciously easy and yummy! As a mommy cooking for 7 people, this is so much appreciated! What possibly got in your mind to create this? You inspire me!
