Recipe: Chicken Medallionsin Lemon Mint Sauce
4 boneless, skinless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1 small onion, chopped
1/4 cup frozen lemonade concentrate dissolved in
1/4 cup water
10 sprigs mint – divided use
1/4 teaspoon nutmeg
1/8 teaspoon allspice
2 tablespoons French onion soup mix
1/4 cup white wine
1 lemon, thinly slicedHot cooked rice for accompaniment
