Chicken in Ranchera Sauce recipe
Serve this tasty southwestern-style chickenwith rice and warm tortillas.
Recipe: Chicken in RancheraSauce
2 1/2 pounds chicken parts
Salt and ground black pepper
1 tablespoon vegetable oil
1 small onion, chopped
1 small red, green or yellow bell pepper, chopped
1 clove garlic, finely chopped
2 1/2 cups chunky salsa
1/2 cup warm water
1 teaspoon MAGGI Granulated Chicken Flavor Bouillon
2 bay leaves
1 cinnamon stick, broken into pieces
1/2 teaspoon dried oregano, crushed

Saute the onion and garlic in coconut oil over a medium heat until golden and soft, about 10 minutes. Add to the blender with the rest of the ingredients. Puree. Transfer to a small sauce pan and bring to a simmer. You can just let it simmer while the rest of the components are cooking, for about 30 minutes or so.
