Chicken Fajitas recipe

Marinated chicken breast strips are quicklystir-fried with bell pepper and onion and served with an assortmentof condiments in warm flour tortillas.

Recipe: Chicken Fajitas

2 tablespoons lemon juice2 to 4 garlic cloves, finely minced1 teaspoon salt1/2 teaspoon freshly ground pepper1 tablespoon chopped fresh cilantro or1/2 teaspoon dried cilantro1/4 teaspoon dried oregano leaves, crushed6 boneless, skinless chicken breast halves,cut into strips1 dozen flour tortillas2 tablespoons vegetable oil1 green or red bell pepper, seeded andcut into strips1 medium onion, cut in half and slicedinto stripsSuggested Condiments:Shredded Monterey Jack or cheddar cheeseShredded lettuceChopped tomatoChopped green onionChopped fresh cilantroLime wedgesGuacamoleSour CreamPicode Gallo (fresh salsa)

  • Combine first 7 ingredients in a largeself-sealing plastic bag; add chicken and seal, removing as muchair as possible. Allow to marinate for several hours in refrigerator.Drain chicken, reserving marinade.
  • Wrap tortillas in aluminum foil; bakeat 350°F (175°C) for about 15 minutes.
  • Heat oil in a large, heavy skillet. Addchicken; cook 2 to 3 minutes, stirring constantly. Add peppersand onion and saute vegetables for about 2 minutes. Add marinadeand continue cooking until vegetables are crisp-tender. Removefrom heat.
  • To serve, spoon a portion of chicken mixtureonto a warmed flour tortilla and top with desired condiments.

    Makes 6 servings.
