Chicken Burritos.

Here’s a quick and easy chicken burritofilling that makes a satisfying busy-day meal.

Recipe: Chicken Burritos

1 tablespoon vegetable oil
1 pound boneless, skinless chicken breast halves, cut into 2-inchstrips
1 1/4 cups water
1 (1.5-ounce) package taco seasoning mix
8 (10-inch) burrito-size flour tortillas, warmedOptional Toppings: Shredded cheddar cheese,shredded lettuce, chopped green onions, sliced olives and salsa

  • Heat vegetable oil in large skillet overmedium-high heat. Add chicken; cook for 3 to 4 minutes or untilno longer pink. Add water and seasoning mix. Bring to a boil.Reduce heat to low; cook for 3 to 4 minutes or until mixturethickens.
  • Spoon chicken mixture evenly over tortillas.Top with shredded cheddar cheese, shredded lettuce, chopped greenonions, sliced olives and salsa, if desired. Fold into burritos.

    Makes 8 servings.
