Chicken and Cheese Entomatadas.

Entomatadas are a classic Mexican favoritefeaturing shredded chicken and fresh cheese wrapped in a seasonedcorn tortilla then cooked in a delicious creamy and savory tomatosauce.

Recipe: Chicken and CheeseEntomatadas

1 cup hot water1 tablespoon MAGGI Granulated ChickenFlavor Tomato Bouillon2 (3.98-ounce) packets MAGGI Sofrito SeasoningPaste (tomato, garlic, onion)2 tablespoons vegetable oil8 medium corn tortillas2 cups shredded, cooked chicken breastmeat*1 1/4 cups crumbled Mexican fresh cheese(queso fresco) – divided use1/2 cup NESTL Media Crema

  • Mix hot water and bouillon in large bowluntil dissolved. Stir in sofrito; set aside.
  • Heat oil in large skillet. Fry tortillasone at a time for 2 to 3 seconds to soften. Drain tortillas onpaper towels. Dip tortillas in sofrito mixture; fill evenly withshredded chicken and 1 cup cheese. Roll filled tortillas andarrange in same skillet.
  • Pour remaining sofrito mixture over filledtortillas in skillet. Sprinkle with remaining 1/4 cup cheese;cook over medium-low heat for 2 to 3 minutes or until sauce isslightly thickened and entomatadas are heated through.
  • Serve topped with media crema.

    Makes 4 servings.

    *Or substitute with leftover turkey.

    So my new neighboorhood is a little further from downtown and so we get a lot of the trucks. I have yet to get the nerve to go chase them down. Some day soon. This is close to one of my favourite Mexican dishes.. but the dish I know as Entomatadas has potatoes inside the tortilla. Can anyone help me find a recipe??
