Chewy Maple Cookies recipe

Pure maple syrup gives these yummy cookiestheir soft and chewy texture.

Recipe: Chewy Maple Cookies

1 1/2 cups all-purpose flour2 teaspoons baking powder1/2 teaspoon salt1/2 cup vegetable shortening1 cup firmly packed brown sugar1 large egg1/2 cup pure maple syrup1/2 teaspoon vanilla extract1 cup sweetened flaked coconut

  • Preheat oven to 375°F (190°C).Lightly grease baking sheets.
  • In medium bowl combine flour, baking powderand salt; set aside.
  • In a mixing bowl, cream shortening andbrown sugar until fluffy. Beat in the egg, syrup,and vanilla until well mixed. Stir in flour mixture until justmixed and then stir in coconut.
  • Drop by tablespoonfuls 2-inches apartonto prepared baking sheets. Bake for 10-12 minutes or untilgolden brown. Transfer to wire racks to cool. Storein airtight container.

    Makes 3 dozen.
