Honey makes these lemon-scented cookiessoft and chewy.
Recipe: Chewy Honey LemonCookies
2 cups all-purpose flour 1 1/2 teaspoons baking soda 1/2 cup honey 1/3 cup butter or margarine, softened 1/4 cup granulated sugar 1 tablespoon finely grated lemon peel 1/4 cup egg substitute or 1 large egg 1 cup powdered sugar 2 tablespoons lemon juice
Preheat oven to 350°F (175°C).
In a small bowl, combine flour and bakingsoda. Beat honey, butter, sugar and lemon peel with an electricmixer, in a large bowl, until creamy. Add egg substitute andbeat until smooth. Reduce speed to low and gradually stir inflour mixture until blended.
Drop dough by rounded teaspooons 2 inchesapart on nonstick or lightly greased cookie sheets. Bake for7 to 8 minutes or until lightly browned. Cool completely on wireracks.
While cookies cool, blend powdered sugarand lemon juice until smooth. Drizzle over cooled cookies.
Makes 24 cookies.
