Chewy Fruit & Oat Bars recipe

Chewy oat cookie bars chock-full of mixeddried fruits.

Recipe: Chewy Fruit &Oat Bars

3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 (8-ounce) container vanilla yogurt
1 large egg, lightly beaten
2 tablespoons vegetable oil
2 tablespoons milk
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups quick or old fashioned oats
1 cup diced dried mixed fruit, raisins, or dried cranberries

  • Heat oven to 350°F (175°C).
  • In large bowl, combine sugars, yogurt,egg, oil, milk, and vanilla; mix well. In medium bowl, combineflour, baking soda, cinnamon, and salt; mix well. Add to yogurtmixture; mix well. Stir in oats and fruit.
  • Spread dough onto bottom of ungreased13 x 9-inch baking pan.
  • Bake 28 to 32 minutes or until light goldenbrown. Cool completely on wire rack. Cut into bars. Store tightlycovered.

    Makes 24 bars.

    Finally, we like to refrigerate the granola mixture for about 2 hours. This hardens everything and makes it easy to cut the granola mixture into bar 4 s. Right out of the refrigerator the bars will be hard since they are cold. Leave them out for an hour and they will warm to room temperature and become a little softer and chewy. Hello Guys, i have a question instead of a comment. Can you sub coconut oil for butter in this recipe? And seeds for nuts? I have a very restricted diet. Thank you in advance for your response
