Chewy oatmeal nut cookies with a soft caramelcandy baked in the centers.
Recipe: Chewy Caramel OatmealCookies
3 cups quick-cooking oats1 cup all-purpose flour1/2 teaspoon baking soda1/2 teaspoon salt1/2 teaspoon ground cinnamon3/4 cup butter-flavored vegetable shortening1 1/4 cups firmly packed brown sugar1 large egg1/3 cup milk1 1/2 teaspoons vanilla extract1 1/2 cups chopped nuts3 dozen soft caramels
Preheat oven to 375°F (190°C).
Combine oats, flour, baking soda, saltand cinnamon in a medium bowl; setaside.
Combine shortening, brown sugar, egg,milk, and vanilla in large bowl andbeat at medium speed until creamy. Stir in flour mixture untiljust blended. Stir in nuts.
Drop by rounded tablespoon onto bakingsheet two inches apart and place acaramel in center – do not press down.
Bake 10 to 12 minutes oruntil light brown around edges and caramel is completely melted.Transfer to wire racks to cool completely.Store in sealed container.
Makes 3 dozen.
