Chewy Caramel Oatmeal Cookies recipe

Chewy oatmeal nut cookies with a soft caramelcandy baked in the centers.

Recipe: Chewy Caramel OatmealCookies

3 cups quick-cooking oats1 cup all-purpose flour1/2 teaspoon baking soda1/2 teaspoon salt1/2 teaspoon ground cinnamon3/4 cup butter-flavored vegetable shortening1 1/4 cups firmly packed brown sugar1 large egg1/3 cup milk1 1/2 teaspoons vanilla extract1 1/2 cups chopped nuts3 dozen soft caramels

  • Preheat oven to 375°F (190°C).
  • Combine oats, flour, baking soda, saltand cinnamon in a medium bowl; setaside.
  • Combine shortening, brown sugar, egg,milk, and vanilla in large bowl andbeat at medium speed until creamy. Stir in flour mixture untiljust blended. Stir in nuts.
  • Drop by rounded tablespoon onto bakingsheet two inches apart and place acaramel in center – do not press down.
  • Bake 10 to 12 minutes oruntil light brown around edges and caramel is completely melted.Transfer to wire racks to cool completely.Store in sealed container.

    Makes 3 dozen.
