Cherry Tomato Salad recipe

A delicious, marinated Mediterranean-stylecherry tomato salad with pine nuts, green onions, and green andblack olives.

Recipe: Cherry Tomato Salad

6 cups cherry tomatoes, halved1/4 cup sliced green olives1 (5 3/4-ounce) can whole pitted blackolives, sliced2 green onions, minced1/4 cup pine nuts1/2 cup extra virgin olive oil3 tablespoons red wine vinegar1 tablespoon granulated sugar1 teaspoon dried basil, crumbledSalt and freshly ground black pepper totaste

  • In a large bowl, combine cherry tomatoes,green olives, back olives, and greenonion.
  • Toast pine nuts in a dry pan until goldenbrown, stirring frequently. Add totomato mixture.
  • In a small bowl, whisk together oliveoil, red wine vinegar, sugar and oregano.Season with salt and pepper. Pour over salad, and gentlycombine to coat. Chill for 1 hour before serving.

    Makes 8 servings.
